I made the most delicious meal! We had shrimp and grits. I have to admit that I didn't make it the way the restaurants do. Frankly, I think mine is better, grin, grin. Here's what I did: 2 cups of uncooked grits 1 lb suasage of your choice 1 c chopped cook ham (feel free to use more ham) 12 oz cooked shrimp 1/3 c bell pepper (your choice of color or colors) 2 stalks of green onion salt butter Using a LARGE pot, brown the sausage and then set it aside in a bowl. In the same pot, cook the grits as you would, normally and salt and butter to taste, but DON'T over-do it. The sausage and ham provide plenty of flavor. Sausage should be cooked, browned, and crumbled. Chop ham into bite-size pieces. Set the sausage and ham aside in the bowl. If the shrimp is frozen, thaw, drain well, and then stir them into the hot cooked grits. In the meantime, chop the onions and peppers and put in the pot with the cooked grits. Stir and mix well. Next, take the items from the bowl and pour into the grits. Stir well. Let it continue to simmer for 5 or 6 minutes. Now for the most important step. Get a plate (or bowl), a serving spoon, and a fork to dig in, dish up, and enjoy! Yum!!! If you make this, post it and maybe some pics, too. Tell me what you think. |

![]() It's that time of year - graduations and proms galore! I'm showing off my last graduate at the banquet/prom. We had a wonderful evening to remember. He commented several times how glad he was that he went. Even my husband thought it was an impressive evening. And yes, for those of you who don't know anything about homeschooling, yes, most of the parents were there and yes, the soon-to-be-graduates enjoyed the company of their parents. Although, I have to admit, my husband and I left around 10pm for some much needed rest while my son remained with his date until midnight. Indeed it was an evening to remember. The most touching part was when the seniors were presented on the staircase and the dads escorted their daughters down the stairs. It was a real tear jerker - I got a little weepy and I don't even have any daughters! The room was filled with evening gowns and tuxedos. It was so elegant. The Memphis-area Home Education Association really knows how to send folks off in style. I'm so glad we didn't miss it! He's so grown up. I miss him already. Below are some misc. pics from graduation as he leads the class in and then receives his diploma. Yes, that's us on the stage because we go across with him. The reason this is required (in this particular graduation) is because as a homeschool student, he didn't teach himself for 13 years - hence, the parents "graduate" too. There's a pic of the banquet/prom - a rather tight pic on the stairs, He's tall like my husband, so he's way at the top in the back. ![]() Determined to exercise! It's late. The local community centers are closed. The YMCA is about to close. Hubby just came home. I am determined to exercise! Don't want to leave since Hubby is home. Hmmmmm???? Determined to exercise! I turn on the radio and listen to the Bible teachers. Turn up the volume. Set the timer. Strap on the ankle weights. Grab the hand weights. Making good use of my open floor plan. Round and round I walk. Again and again and again. Up the stairs. Down the stairs. Then I jump in place. Determined to exercise! And I did it! |
